Busy Mum's Couscous Salad

A bowl of colourful couscous salad

A fresh, Mediterranean-style salad that's rich in fibre, healthy fats and antioxidants to support heart health, digestive health and lasting energy. Perfect for lunch, meal prep, BBQs or as a nourishing side dish.

Serves 4–6

Ingredients
Method
  • 1 cup couscous
  • 1 cup boiling water
  • 100 g feta, crumbled
  • ½ cup semi-dried tomatoes, roughly chopped
  • ½ cup pitted black olives, sliced
  • 2 large handfuls rocket
  • Salt and pepper, to taste
  • 1 lemon cheek, squeezed over salad
  1. Place couscous in a large bowl and pour over the boiling water. Cover and leave for 5 minutes.
  2. Fluff the couscous with a fork and allow to cool slightly.
  3. Add the feta, semi-dried tomatoes, black olives and rocket.
  4. If using, gently fold through the roasted pumpkin.
  5. Season with salt and pepper.
  6. Squeeze over the lemon juice and toss until well combined.
  7. Serve immediately or refrigerate for up to 3 days.
Optional extra

1–2 cups roasted pumpkin, cooled

Notes
  • Roast pumpkin adds extra fibre, vitamin A and a subtle sweetness that pairs beautifully with the salty feta and olives.
  • For extra protein, add grilled chicken, chickpeas or salmon.
  • Best served slightly chilled or at room temperature.
  • Fresh, tangy and satisfying with every bite.
