Hidden Veggie Pasta
A smooth, sensory-safe sauce that sneaks in veggies for easy mealtimes. This nourishing sauce is blended extra fine to provide a gentle, consistent texture that respects sensory preferences while supporting healthy growth.
What You'll Need
For the sauce
- 2 medium carrots, peeled and sliced
- 1 cup cauliflower florets
- 1 small sweet potato, cubed
- 1 medium zucchini, sliced
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 cups low-sodium vegetable stock
- 2 tbsp olive oil
- Pinch of mild mixed herbs
For the pasta
- 250g pasta (familiar shapes like fusilli or penne work best)
- 1/2 cup reserved pasta water
- Mild parmesan cheese, finely grated (optional)
- Small pinch of salt for boiling water
Cooking Instructions
1. Boils your favorite pasta shape in salted water until tender. Reserve half a cup of the starchy pasta water before draining.
2. Steam or lightly sauté your chosen veggies (we love carrots and cauliflower) until they are completely soft.
3. Add the soft veggies to a blender with your tomato sauce and reserved pasta water. Blend thoroughly until every tiny piece vanishes.
Sensory Tip: Predictable Texture
Blending the sauce for twice as long as usual creates a ‘predictable texture’. This is often safer for kids who are sensitive to unexpected lumps or ‘bits’ in their food.
4. Mix the silky sauce into the warm pasta or serve separately as a dipping sauce to match your child's preference.
Flexibility Tip: Serving Style
If mixed foods are a challenge, try serving plain pasta with the sauce in a small side bowl. This lets your child explore the new texture at their own pace without ‘contaminating’ their safe food.
